Without recipes, with no prior designs on paper, only following the winemakers’ own taste, the wines have taken shape on the basis of separate vinification of each vineyard plot, until the ideal coupage is achieved. For ageing the wine, new French-oak casks from seven cooperages are used, in which the different source forests and levels of toasting are combined in order to achieve a great wealth of nuances. The evolution of such a unique wine is not easy to forecast, so it is left to rest with no haste, noting the changes it undergoes at every moment. Our wines mark their own tempo. It is they themselves which decide when they are ready to leave the cask in order to obtain the best balance between fruit and oak, not just because the official rules and regulations define the length of ageing.
